Year 2014 - The Beef Wellington, a classic plate with Britain origins, made its way to Cocina Abierta menu when we moved to Condado. We’ve enhanced it with Angus filet mignon, foie gras sauce and noisettes potatoes.
LOCAL ORANGE GLAZE AND PIGEON PEAS MISO - COCONUT AND CASHEW MILK
Year 2012 - This plate arrived to the menu with squid as the leading role. We used to fry and glaze it with equal parts of orange juice, miso and honey, finishing with cashews sauce and coconut milk. In the new version of this menu we’ve substituted the squid with Caribbean Lobster.
