2010 - This dish entered the menu in our first year, after we held a contest between us cooks, while I was traveling, the final decision was a consensus between the votes on our Facebook page and Nico and I’s decisions. The winner was Luismi, his dish was on the menu and he won a financial prize. We made many versions of this dish, but for this menu it’s the first time we use island-raised ducks supplied by Irizarry Meat, we replaced the grapes in the pico de gallo with starfruits, we cooked the duck Beijing style and finished it off with a sauce homemade Hoisin made with fresh Guava.
