2010 - This dish started out as a Filet Mignon side at San Patricio and later on stayed as a permanent menu dish. We make our own Ricotta with goat's milk from the Guacabo fruits, we change the potato for breadfruit, smoked Pancetta made by PRoduce instead of Prosciutto, Ausuba cheese from Vaca Negra as a substitute for Parmesan cheese and wild arugula that has a much deeper spicy flavor than the California variety.
