PUJOLS SWEET POTATO CAUSA
Year 2010 - La Causa Lima, Inca dish, owes its name to the war of the Pacific, where Peru fought with chile and was prepared to raise funds to solve the fight. They offered it "For the Limeña Cause."
This dish was part rather than art of the first Open Kitchen menu and was a collaboration between Nico, Cesar and myself. Nico and Cesar were both chefs and they are one of my culinary friends that I admire the most. I wanted to use the Peruvian blue potato instead of the yellow one, Nico made the octopus ceviche and Cesar finished seasoning the dish.
In the current version, after several tests, we use Peruvian yellow chili paste produced by the F&A farm in Utuado, we change blue potato for Pujols sweet potato and lime for Tahiti Lemon or Persian Lime, which has an aroma similar to Japanese Yuzu and is a hybrid of lemon and Key Lime, finally, octopus that is fished in the Naguabo area, and we obtained through the alliance with the ConCiencia Collaboration Foundation.
